Perfectly Peeled Garlic

Italian food has long been my favorite since I worked at Spaghetti Vendors, a small Italian restaurant in Scottsdale, AZ as a teen.  They welcomed me almost as if I were family, and taught me how to create wonderful food the old-fashioned, authentic way.  Recipes from scratch, making the pasta, peeling garlic by hand, etc. were all part of the deal.  I still appreciate the wonderful skills they shared, but the one thing that I wasn’t so fond of doing was peeling the garlic. Pruned skin and garlic skins accidentally shoved under my nails were not fun.  

Recently I went to my sister’s house and as we were making dinner, I began to separate and peel the garlic by hand.  She looked at me with shock and asked “Why are you doing it that way?  Here, use this.”  She pulled out a little rubber tube from her drawer that looked like it wasn’t worth anything, but I quickly learned how incredibly valuable it was!  I’d tried other garlic peelers before with limited success, but this one REALLY works!  A couple of rolls and it’s peeled to perfection.  From that moment on, I have not peeled garlic in any other way.  Hope this makes your cooking just a little more enjoyable.
